THYME
Thymus vulgaris
Thyme is a Mediterranean herb which is part of the mint family. This hardy perennial thrives in full sun and once established, requires little water. This herb can be used in cooking either fresh or dried and is also used medicinally for its antiseptic purposes. Thyme can get quite woody, so pruning after it has flowered helps. It is easily propagated via cuttings.

HARVEST
You can harvest from your plants as soon as they are established. The very best time to harvest from them is just before they flower when their flavour is best.
EAt
Use fresh or dried thyme to flavour savoury and sweet dishes. Also yummy in teas!
PRESERVE
Dry thyme by the bunch, hanging upside down. Once dried, remove leaves from stems and store in an airtight container.
